Future Vet Student, Currently in High School, Need help choosing college

So Im a senior right now and getting ready to apply to colleges. Ever since freshman year Ive wanted to be a vet, and I have a lot of animal experience, my sat scores are decent, not great, I have good grades, im taking all AP classes this year, out of 800 or so students im number 15, I have good ECs, and I have many leadership positions. My chances can go either way, im sure most can agree..
Im applying Early Decision to Cornell University, since it has a prestigious and nationally ranked vet school..
Heres the thing:
I live in Texas. I used to live in NYC when I was way younger, and I visit NY a lot, because I want to live there again, but I am out of state. Now..Im not counting on getting accepted to cornell. It is definitely my reach school.. the thing many people have told me to just go to A&M...I know it is a good vet school, but as a university, its decent, and pales in comparison to Cornell. I have read various things and I dont know what to believe. Some people say that Vet schools do look at the ranking of your college, and others say they dont so just go to a cheap in state school.
My plan was, if I dont get accepted to Cornell, I can go to NYU, but Im not sure if its a very prudent decision considering I want to be a vet. If I dont get accepted to Cornell right away, I kind of want to make a transfer there eventually. I know NYU (New York University) is a better university than A&M statistically speaking.
A lot of sources say it is better to attend a college that has a vet school, as there will be many opportunities there for you to increase chances to get accepted into a vet school.
Now..Should I just stick to my instate A&M which I could have not worked so hard to get into...or go to NYU...?
Pleaase help xx

Cornell would be great.

Searcheable list of colleges with accredited vet programs:

I know Cornell is great, but my chances of getting in are slim, and I need a second good school that will do me good in getting into vet school.

I would expect that vet school is like medical school in that you just need to have good background in chemistry and biology with a good grade-point and they might give slight consideration to the quality of the undergraduate school. University of Rochester is more science-oriented than NYU although NYU would be fine. Or you could look at top notch public universities in other states where at least the tuition (even for out-of-staters) would be a little lower. U. Minnesota is supposed to be a good bargain for OOS. U. Michigan is a great school. For private schools Hopkins would be slightly easier than Cornell to get into and would be a great science background.
