Do I have a better chance at getting a job as a geologist or a geological engineer? I would be happy doing either, I just don’t want to be constantly unemployed.

Both are good, growing fields, it really just depends on the kind of work you want to do. Geological Engineers mostly work for mining/oil/energy companies, whereas geologists do work for those companies but also in other areas.
