What are some good environmental science related extracurriculars? I was thinking of founding an organization in my town to help clean and maintain our parks.
That sounds like a good idea. Are there any endangered native birds, butterflies or bees in your area ? Could your organization start a native plant area in a park to create a small habitat for the particular endangered species (of course, this would require a bit of research on your part.)
Does your school have an Envirothon competition? How about a recycling program?
I’d be willing to look in and see if we have something like a native species! I’m not sure what an Envirothon competition is, and we don’t have a recycling program.
We have a trail that’s really important to the town’s history, I could try and clean that too. Would a good idea be to just really focus on starting an organization/group to try and make the town clean and nice?

I think that starting an organization to clean the park/historic trail is a fine idea, especially if it is something you would personally enjoy, and would demonstrate leadership and community involvement. Making a small native plant habitat (even if only a few square feet as a demo) could be an add-on later if you decided to expand the focus. If at all interested, you could google “native plant society” and the name of your state, and I’d bet you could find resources and info.
If you contact the environmental science dept. of your state university system and explained that you are trying to develop high school EC projects, I imagine someone would be happy to give you more ideas!
Check to see if your state’s Department of En. Con. has a summer camp or summer/other programs. My S attended our state’s and from there was chosen as a volunteer for future summers where he acted as a camp counselor (as a volunteer) at a teen ecology camp. Consider getting involved in Scouting - lots of merit badged and opportunities there. Consider getting a job at a farm or local plant nursery. Check out your cooperative extension program. There may be opportunities there. There is always starting an environmental club at school if yours doesn’t already have one.
Thank you all for these great ideas! I’ll get ahold of the DNR, IU, and the Indiana Department of Environmental Management on going further with my ideas. I know my school used to have an Environment Club but we don’t anymore, I’ll definitely look into restarting that. Summer camps sound super fun, I’d like to help lead one. Thanks again!

Does your school really not recycle even plastic bottles or paper? That would be the low-hanging fruit - a project both important and easy to work on.
^ We do recycle, I just read the question wrong. It’s completely done by the janitorial staff.
I actually went to a state park today and they were talking about mussels and how important they are to our rivers, so I’m thinking of doing something with mussels.
We have 3 nature preserves in my county! I could definitely contact the department that takes care of them and ask if I can assist.
I also want to try and organize a community clean-up event or something similar? How would I go about doing this?
Maybe reach out to the existing service orgs in your community; a lot of times they are happy to sponsor or work with you on a project. (Kiwanis or whatever)
We have a Kiwanis club at school that I am a part of. Do you think they would sponsor me organizing an independent event?

OP, I suggest getting involved in existing environmental organizations if you have a genuine interest. It sounds like you are interested in leading without having been a participant. Getting involved in existing activities can be useful for getting the experience and local info you would need to be successful in your future activities, which could involve leadership.
Ever since a few years back, Recycling Club was starting at my school up in North Indiana. I see that your school currently doesn’t have a club of the sort but I do think it would be a great idea! You could always talk to any of your teachers about creating a club like this and see if they would go about doing so. A junior in a former class talked to my current Japanese teacher and he adored the idea and talked to the school principals ASAP and they loved it as well. The next year, we began having this club where we put recycling bins in every classroom and met up on Fridays to pick up the bins and empty them into an even bigger bin outside of the school. I’m currently a sophomore and I stop by our Recycling Club meetings once in a while to help out or see how it’s going. 
Years later since the club started and it’s moving very swiftly.
Regarding your original park idea, I can’t be of any help but I do hope that you find a way to help your local parks and town out–such a lovely idea!
