Ok so I just got a note mailed from my Choate interviewer. She basically said happy holidays and to come to her with any questions. I thought this was usually done by email, so my question is basically do Choate interviewers usually do this?

We received an email from Choate, but we did receive handwritten notes fom other schools.

As a rule I would try to resist the temptation of trying to look at correspondence from the schools as tea leaves by which you can divine much of anything.

We have gotten holiday cards from pretty much all the schools with a hand written note from our interviewer - "looking forward to getting your application" or "keep up the good work, enjoy your time off" and things like that. Additionally, we did get hand written notes from all but one of the schools we interviewed at within a week or two of the visit.
We're not reading much into it either. In fact, we even got a card from a school that met my son at our current school and it had a hand written note "Dear great son of Linda S, I hope you are still interested in our school. If so, please schedule a visit soon. Happy Holidays."

schools are following up on potential applications. they want visits and email requests to turn into paperwork submitted. my mom has a friend at a CT prep who said admissions groups get rated by the ratio of interviews to applications. the closer to 100% the better. the notes help do just that.

nhfootballer. Thanks for telling us that. I got hand written and typed letters with real signatures and comments (hand-written) on them. I never did an interview or submitted anything besides inquiry and interest forms. What do you think of this?

Same thing iherc. they want you to come visit and apply.
St Pauls sends you info about everything you check off on your inquiry form. For us, it was in the form of a letter, some with handwritten notes - even before our visit.
Then on the other hand there are schools that never contact you again once you fill out the inquiry. One sent us an email confirmation and we never even got a view book. It hadn't made the visit cut, and probably wouldn't have even with the book so I didn't call.
One school sends us post cards about once a week.
It's all in how they have decided to increase their applications.

Real question is -- did you send THEM a handwritten thank you note?

Absolutely.

in one school, D sent the school a hand-written thank-you note after the interview; should we (parents) also send one? or is that overdoing it?

I would say that since it is your daughter's interview, it is most appropriate that she send the thank-you note; I think it is redundant for you to send one as well.
A note from you might be in order for the specific people who met with you/toured you, etc.
