Do you have to use a waffle iron? Can you make it a pancake? (Chancake??)
^^ Probably - but isn’t the objective of a pancake to be “light and fluffy” and a waffle to be more crisp? This is going to crisp up. Plus I’m guessing the heat on both sides at once and compression of the waffle maker is a plus for the end product.
I decided to try this. Used sharp cheddar. It’s really good. If using a full waffle iron, stick to 1/2 the iron as it doesn’t make much.

@ucbalumnus , I wouldn’t even have tried it if I hadn’t read in a post that it magically doesn’t taste like cheesy eggs. I found this to be true. (I like eggs and cheese but wouldn’t bother putting them in my waffle maker just to have a different shape). The chaffle has a great texture that makes it not taste like cheesy eggs. Kind of like how crispy cheese (like cheese crisps, or the edges on a lasagna) is so much different from regular noncooked cheese.
