I’am going to be a Biology major and would like some suggestions as to which minors would compliment my major and which would help me in the long run (MCAT or med school)
depends on what you want to do. Biology is a notoriously poor paying major.
Are you looking for something to add employment heft (business, for example), complement a skill (Engligh/Writing) or something that you enjoy.
It’s more a personal thing - it’s not necessarily going to help you employment wise.

Anyway, back to your question. A minor is not needed to enhance your degree. No professional school or program will choose someone simply because they have a minor. Whether you should pursue a minor, or just additional course in a field, really depends on your interests and goals.

How will you have time to pursue a minor if you plan on medical school?
Your time will be spent on your studies that are perfect, and, extracurricular activities that focus on volunteering, labs, and shadowing in clinics/hospitals. (Given current Covid restrictions, it will be difficult to gain access to medical facilities).
Your part-time jobs will be med-school related because you will need every penny saved to pay for med school.
We just went through this with our daughter.
Change your major to anything but biology. (Too much competition from all of the other med school hopefuls and weak job outlook if you don’t get into med school.)
Do a minor if you are interested in the subject. The med school admissions committees will not care. It might give you ideas about future career pathways.
Switch your major to Biostats or Bioinformatics and minor in Spanish (or another language spoken in the US that you may already have a strong foundation in).
