Here's a mental exercise for you: Chance the worst EC list you've ever seen! (Please!)

I'll be quick and true to the title - please take the moment to chance me, I'll do it back if you value the opinion of a fellow high school senior! >:D<

REACH SCHOOLS:
- Vanderbilt
- UC Berkeley
- UC Los Angeles
- UC San Diego

TARGET SCHOOLS:
- UC Santa Barbara
- UC Santa Cruz

SAFETY SCHOOL:
- San Diego State University (SDSU)
- I know I should have more here, I'm workin on it! Everyone wants to aim high, don't they?
(I live in CA, so all the UC's are in state.)

Stats:

Unweighted GPA: 3.92

UC GPA: 4.27

SAT: 2140

ACT: 31

APs: AP Comp junior year (got a 5 on the test), and senior year I will be taking AP Chem, AP Spanish, and AP Literature.

Now, for the fun part: Extracurriculars. Since I had a very different mindset about college up till this past summer, I have a grand total of 2 ECs that I can put on college apps! Woo! They are:

Was active in the boy scouts up until Sophomore year, only achieved second class (better than first class, but it's no eagle!)

Volunteered with the Amigos de las Americas program for 8 weeks over the summer, living and working in rural Peru with only two other gringos in my community. This is a great EC I think, but without a background of other ECs to give it context, I feel it falls a little short, especially for my reach schools.

So, now I think you guys see my problem! I'm planning on retaking the ACT to raise my score, along with the SAT subject tests, but I'm not sure that'll help much. Also, even better than chancing, if anyone had advice on things I can do senior year to add to my EC list, I'd be appreciative! I'm extremely passionate about both the Spanish Language and Computer Science, but I'm not entirely sure how to translate that to what the colleges care about.

Start a CompSci club at your school. If there isn’t a Spanish Honor Society at your school, start that too. Your SAT score looks good. Take SAT Subject Tests.

Join stuff! What were you doing through all of high school? Haha.

Your SAT and GPA are fine for your target schools and maybe UCSD. Instead of using that time studying, try making up for your lost time by trying out new ECs. As mentioned, you should start or join a Computer science club or you could also try an internship at a company near you!
