Do courses you take in high school and how you do in them affect what you major in during college? For example, would doing poorly in a Physics class (or not taking a Physics class, although they are offered at my high school) affect the possibility of me majoring in Physics or Engineering in college?

Not taking Physics in high school may make it harder to compete with others in your first two Physics classes. This lack of experience may put you at a disadvantage equivalent to 1/3 - 2/3 of a grade in those classes. You will take upwards of 32 (and easily more than 40) classes as an undergrad. In the end, it’s not a big deal. If you’re deciding whether or not to take Physics or how hard to try in Physics in high school, I recommend you take it and try as hard as you can. If it’s already passed and you’re deciding what to major in, don’t let anything that happened in high school affect what you do in college.

When i was in high school,i remember that physics an chem are both required and it needs to be 75% or higher
