Do courses you take in high school and how you do in them affect what you major in during college? For example, would not taking a course in Psychology (or taking it and doing poorly in it), although Psychology and AP Psychology are offered in my high school, affect the possibility of me majoring in Psychology in college?

Many high schools do not offer psychology, so introductory psychology courses assume no background in the subject (though a high score on the AP psychology test may allow skipping a semester introductory course in college).

However, introductory college courses in biology, chemistry, and physics for those majoring in those subjects or related subjects often do assume a high school level background in those subjects. Of course, taking four years of English plus math through at least precalculus (and calculus if available to you) is often necessary for many majors.
