Do courses you take in high school and how you do in them affect what you major in during college? For example, would not taking a course in Psychology (or taking it and doing poorly in it), although Psychology and AP Psychology are offered in my high school, affect the possibility of me majoring in Psychology in college?

High school courses shouldn’t affect what you major in. Some weird exceptions might exist, like if you took no math courses in high school, you probably won’t be able to major in math or engineering. As long as you have a good general education in high school (math, English, science, history, etc.) you should be able to major in anything you’d like. Some students will be more ahead than others, but that doesn’t mean everyone can’t succeed.

If you took no math courses you wouldn’t meet the minimum criteria for college entrance, whether math major or anything else. But as long as you meet the minimum college criteria you should be ok for most majors (your HS should have that criteria). For math and science majors you will have a better chance if you take extra math/science classes and get good grades. And GPA overall will matter for entrance, although I doubt the individual classes will matter as much.
