How can I improve extracurriculars?

I’m a sophomore and don’t have very strong ECs. My weighted GPA is a 4.26, and I would have taken 9-10 APs by the end of HS. I haven’t taken the SAT/ACT yet.
How many options do I have for college with what I have now, and what can I do to improve?
-I go to a Japanese Saturday school that I’ve been going to since kindergarten and plan on going all the way (it offers up to junior year). I’m there for 7 hours every week, it’s for fluent kids and just like regular school in Japan but on Saturdays.
-Did STUCO at Japanese school last year and quit this year, but I’m joining again next year.
-I’ve been playing violin in the 2nd best orchestra out of 5 at school since freshman year but was considering quitting at school… this would’ve been my only 4-year activity so maybe I should stay? I’ll play violin regardless of whether I play at school or not. If I just take private lessons, would that count as doing it all 4-years? (been playing since 4th grade). I don’t love the class, but I like playing on my own. What should I do for this activity?
-Beta club; plan on doing it till senior year.
-I take a theatre class outside of school 2-hours per week. I got a lead role in our short original showcase musical that we’ll perform in a few months.

  • Leadership Intern at Camp Invention last summer, might do it again
  • Thinking about starting a blog, already have some essays written out
-I want to join Model UN, Young Dems, and a discussion club next year, but I’m scared admissions will think I piled a bunch of clubs my junior year just to impress colleges. I’m actually interested in them! I only discovered my interests recently, I had no idea I wanted to do these clubs and political science/international relations in college until a few weeks ago.
    Thanks for the help!

It’s hard to tell what college options you have now based off of weighted GPA (every county/ school system may have a different way of calculating it) and lack of standardized test scores, but from what I have read it sounds like you are a good student.

Advice I would give: find something that you are passionate about and stick with it. From reading this, it seems like it is violin for you. You are still a sophomore so there is time to develop your passions. I would say maybe for summer find a program or activity that has to do with poli sci/ international relations since that is something you want to explore more into.
