How can I improve my SAT scores..?

I didn't do as well as I had planned, but then again I kind of took my first SAT blind.

I received a 1680. If I studied everyday for about an hour or so for the May/June SAT, will I most likely bring it up to at least a 2000?

Also, I think I have some test taking troubles. Kind of like test anxiety, I guess. Is there any way to help with that as well?

Yes. If you study and study WELL, you can improve your score to 2100+… After that, you just need to study a bunch and sometimes get lucky especially for vocab. I studied to go from 1720 to 2170 and that was after studying my butt off. I’m studying for a few more months to go from 2170 to 2310 or somewhere near there before the May SAT test

For test anxieties, just take lots of practice tests both timed and untimed. Someone from the CC suggests that you take the first few practice tests with unlimited time. THen bring it down in increments until you have only 2/3s of the allotted time. So if you are given a normal 20 minutes, bring it down to 14 minutes or something like that.

Doing so will help you get used to the pressure.
