Applications have a place for ECs, you would list volunteering there. For example, take a look at the Common Application.

You do not submit verification of ECs. You can also discuss them in your essays if you like.

Do I need to ask for a certificate of proof for the amount of hours I worked?

No, colleges don’t require proof as they don’t have the time or means to check ECs. You sign your application stating that you have been truthful, so colleges take you at your word unless they see something that doesn’t add up, then they might ask for verification.

Like entomom says, they take your word for it. The reason? your hours really don’t mean that much to them – sorry to burst your bubble. When everyone submits vol hours, they universally lose any importance.
