I'm on Minerva right now and I'm kind of confused as to how I properly register.

First off, how do I know which courses are ones that freshmen are allowed to take? I see an option for undergraduate under "Course Level" but nothing more specific than that.

Also, how do I know whether I am properly fulfilling requirements or not?

I was also browsing through courses and it seems like most are capped at between 60 and 150...haven't seen anything that goes to the 600 some have mentioned, can anyone explain why that is?

It is best that you browse courses by selecting the subject and then typing in the course number. On registration day, submit the CRN (it’ll be faster than browsing and then selecting each course individually!). Those small classes you see may be upper-division classes or lab sections/conferences/tutorials. You should be looking at the 200-level classes. After you do course registration, you’ll have to submit a course approval form that an advisor will go through.
