How many SAT Subject Tests should I take?

Hi all,
I'm a sophomore with a 4.0 unweighted GPA and am starting to think about the SAT II's. I'm thinking of taking six spread out over the next three years. I'm pretty sure that I want to study engineering in college, so I know I need to take the science/math ones.

Biology - took the class last year (got an A+), probably will take the test either this November or next January

Chemistry - in this class now, will take the test in May or June

World History - I'm in AP now and love history (took practice questions on college board website and got 20/22)

French - I've self-taught myself a lot of French (never taken any class) but love the language and plan to study in Canada, so it might help

Physics - I'll take Analytical Physics next year (probably take the test in June after the class) and AP Physics C in senior year

Math II - I don't know when to take this one ... I'm in Honors Alg. II/Trig. right now and should be in AP Calc AB next year

As far as I can tell, the three most important ones for me to take are Chemistry, Physics, and Math II. Do you think that taking all six tests is a good idea? When should I take the Math II test?
