I was accepted with an "undecided" major, but I know that I want to study either biology or engineering. I really don't want to take classes that are not useful for my intended major.

Does this mean that I'm stuck with liberal arts?

Call up the admission’s office and speak with someone directly about the possibility of changing your undeclared status to a specific major.

You can still take intro/pre-req classes in those majors even if you’re not declared, the same classes you’d be taking if you “officially” belonged to one of them. You would have take a lot of DECs/core classes that can be the same no matter what major you are, too. As a freshman (I’m assuming?) you have nothing to worry about, just explain what majors you’re leaning towards when you’re registering for classes during orientation. If you really want to you could probably call or email about being declared a major, but it won’t hurt you if you don’t.
