I tried contacting my IB coordinator about sending my IB scores to UCR but she hasn't done anything yet. Is there any way I can show a counselor or someone my scores so I can drop one of my classes? I have no idea how to get in contact with them.

Or should I drop the class now and show the IB score later so I don't get stuck? Is there a deadline for sending AP/IB test scores to UCR?

awesomness! I actually spoke to the admission counselor today about IBs, dont always count on them letting you skip a class, only certain scores will allow you to skip glasses because of completing the degree, otherwise most likely you will receive college elective credits (might boost you to a sophomore standing!)
Do you remember who your academic advisor is? see them / email them tomorrow. I would direct you to call undergraduate recruitment to attain an answer on the merit of the IB, however this late in the game (ur already a student now) they might forward you to your academic counselor.
best of luck! (ps, dont drop yet!)
