I was encouraged during my visit to the Ivy schools to sit as many AP classes as I could handle . I did that and I was accepted into one of them. But the results of the AP exams were not a condition of entry, only maintaining a good GPA in senior year. Is there any risk attached if I don’t sit some of the AP exams since they don’t affect my senior year GPA ?

They recommend taking the exams but it is not mandatory
Like the previous posters have said, no it won’t, and frankly the college you will be attending would rather have you take there courses then give you AP credit for them.
Most Ivy League colleges (which the OP referenced) cap AP credits, if they even give any. If you’re over the limit, and don’t need the AP score for placement, then I see no reason to take. And no, your acceptance will not be rescinded.
