I definitely intend on majoring in CS or Acct. (SN: Is it possible for me to double major in both?) but I have an underlying interest in Psychology, Philosophy & Film. Could I also take classes based on those subjects? Or can I just take classes under those subjects without majoring in them?
The answer to the side not is it depends on the school.
The latter two are both generally possible.
If your college offers accounting and CS, it is probably theoretically possible for you to major in both of them. In practice, it would probably be really difficult and/or extend your time to degree, because both of those are majors with highly-sequenced classes that may offer some scheduling difficulties.
But yes, you can minor in any of those or just take classes in any of those without a major or a minor.
