What kind of stuff can I expect to do after college with this major? I plan to double major in Spanish (I'm already near fluent) alongside an IR concentration in Western Europe. Would this be wise? Would finding a good job be difficult?

it depends on your definition of "good job" i think. if you expect to be making the salary of a CEO, then probably not (though there will always be exceptions), but if you enjoy what you are studying, you will mostly likely end up in some sort of government-related position in which you will be much more content. of course this is pure conjecture, but its how i view it.

I don't think thats necessarily true. IR can take you lots of places, including high paying ones. If you want to go the public or non-profit sector route, you can do that. On the other hand though, I know lots of IR people that ended up in some form of consulting, banking, or defense contracting and make tons of money. Seriously, its only an undergrad major, and a flexible one at that.

I think that with this carreer there is a lot of oportunities, but I believe there is even more possibilites if you learn chinese. Spanish is usefull but there is more future with asian languages, korean and japanese are very good options too.

(to add to maechavarria)
let's not forget Russian, Arabic and Farsi ;)
