So, in the beginning, I addressed the interviewer as Mr.____. However, he always addresses his emails by the first name and did so during the interview. Therefore, in my thank, you note that is what I did. Is this ok? The interviewer was like low 30s high 20s.

That is perfect. You are more than ok.

If he wanted you to change your approach he would tell you.

Ie. “Thanks, but you can call me Jim” is how that goes down.

You were polite and appropriate. He is a grad and an adult senior to you. You are the applicant. Just like a job interview coming out of school. Nice manners.

Thank you! Further, the interviewer said “great job on the SAT” genuinely, but my score is more around the 25th percentile. What does this mean? Am I misunderstanding something here?

Because he knows it’s a way above average score for the world. Or perhaps you have a high subject test score?
