I never had the room in my schedule to take prerequisite courses, which means I will probably have to study for them the same way I would study for an AP exam.

Is this insane or stupid? I really want to take the Physics and Chemistry SAT Subject Test.
This would kill two birds with one stone since neither of those AP courses are offered at my school.
I took regular Chemistry and Physics though..

Regular chem and physics are the only prerequisites as far as I know. It’s not like they have SAT subject classes.

Is regular Physics and Chem enough to do well on the tests?

Unless your regular Physics and Chemistry curriculums are insanely in-depth, get some review books. Often the best way to prepare is to actually get AP books for the subjects. However, be careful with Physics because according to most people, it is the hardest subject test and different from the AP exam.

If your a confident test taker(or at least conquered the SAT) I say go for it. The study books are pretty helpful. If not, it wouldn’t hurt to get a couple tutoring sessions to guide you in how to study. You don’t have to go broke paying a tutor every week just as needed. Hope that helps
