Is it okay for a humanities/ law major not to take very advanced STEM classes?

I am a more arts-inclined person. I am the youngest member of my school’s (selective) Mock Trial team, I am into public speaking, I have won many national writing contests, been published, etc. and that is my “angle” for college apps. My problem is with STEM. I have a lot of difficulty with these subjects.
Freshman year: Algebra 2/Trig (regular)
Sophomore year: Pre-calculus (regular)
Junior year: Calculus AB
Senior year: NO MATH
This is where I am confused. I took Algebra 2/Trig as a freshman so that I could have a little bit of “wiggle room” with honors/regular. Is it okay (for admission to selective colleges) not to take Honors Precalculus and not to take any math as a senior? (The other option senior year is AP Stats which I am frankly terrified of :))

Freshman year: Honors Biology
Sophomore year: Honors Chemistry
Junior year: ???
Senior year: ???
I don’t know if I can handle AP Bio, AB Chem, or AP Physics. (I really cannot stress enough how much I struggle with math and science.) I could take AP Environmental Science and AP Psychology, but will not taking AP Bio, AP Chem, or AP Physics hurt my chances at selective universities? (I might be able to handle AP Bio, if it is necessary)

P.S. I am planning to study law, with maybe economics or international relations major for undergrad.

P.P.S. I am taking the most challenging humanities courses offered at my school.
