Is Junior Year really that important?

I was just wondering. Everyone says that Sophomore year and Freshman year pale in comparison to Junior year when it comes to college applications. Is this true? As a Sophomore, I have my courses set out for next year:

IB Biology (HL, or higher learning)
IB Math SL (It's like an AP Calculus and AP Statistics class mixed)
IB Spanish V (Only Sophomore out of 250 in IB Spanish V next year; everyone else in IB Spanish IV)
IB History of the Americas
IB Business Management
IB Theory of Knowledge
AP Psychology

Seeing as I will probably get all A's (with maybe one B in Spanish V), am I on par with the curriculum of a Ivy League applicant?

From my experience, colleges look at Sophomore and Freshman Year the Most to see if you had been serious early in high school. Freshman yr+Sophomore yr>Junior year but just one of the years alone is not greater than junior year

Many schools don’t even count the GPA from freshman year. They also like to see an upward trend if there is room for improvement. In that case, Junior is the time to show your improvement. So it is very important.
