It seems like you’ve already done so much independent prep for the SAT already that it just comes down to confidence and calm nerves on test day really. If you have those, you’re a sure 2300+. The only thing I can advise you to do when you’re done with your last few workbooks is to keep your vocabulary fresh and don’t over work yourself before fall comes. I kind of had the same situation as you since I also did tons of SAT books (BB, Barron’s, MCGraw, PR11test, some Gruber’s, other workbooks) but still got 2210 on January when I kind of expected better. I didn’t have any other books so I stopped intensely studying for the SAT and decided to retake in June with little stress. Ended up getting a 2360 with 780+ in all sections to my surprise. So I think relaxing a little more this summer in terms of SAT studying (don’t do a book a day - might be negative on your brain, seriously) would definitely help improve your score to where you want it to be.
