My first two years of highschool I took Spanish 1 and Spanish 2, then did not take Spanish my junior year. As a senior, I am taking Spanish 5-6 this semester, and then AP Spanish next semester.

I am applying to SFS: is it too late to sign up and take the Spanish Language SAT II for SFS? Do I have enough Spanish knowledge to do well on the test?

Well, I would recommend picking up a Princeton review prep book and taking a practice test, but the late registration deadline is tomorrow. If you already have 3 practice tests, then go for it, they really only look at your 2-3 best scores, but if you're relying on this one, then I don't know. If you've already taken your final exam and did well on it, then I'd register.

Yes, the January test date is the latest date that Gtown accepts

You already have very good scores, even if you bombed the Spanish SAT II they would disregard it and look only at the three highest ones, so I'd do it. Not taking a Spanish SAT II wouldn't really hurt your app, they can see you've taken 4 years of it in HS, it really can only help you or do nothing at all.

If you get a high score, great! If not, then it's not something to worry about.

I've heard that Spanish and French SATII's were very doable for people who took those languages extensively in high school.

I took German and got a 760, but it was VERY difficult. Every exception to the rule imaginable and it took a lot of outside preparation rather than just my raw knowledge going in. Others have told me that Spanish and French tests are not the same at all.
