I tought myself American Sign Language (ASL). Would this count as an EC? Also, since there is no test which would allow me to demonstrate my knowledge of ASL, how could I prove that I do know it?
I guess it can count as an EC. You can show that you know ASL by volunteering at a place or tutoring others. Then, you can demostrate that you used your knowledge to help others.

ECs are variables, not constants. There is no set value for an activity, rather it is just a piece of an entire picture of the applicant. If there was a hierarchy of extra-curriculars, top schools would get hordes of applicants with the same resumes. In case you didn’t know, colleges look to build a diverse class with people of varying talents and genuine interests in the things they do. If you’re doing an extra-curricular because you think it’s a “strong” one and will help you get into XYZ University, then you’re running the bases clockwise.
Colleges look for students that are both well-rounded and passionate about the things they do. My advice is stick with sign language, volunteer and do whatever you want with it-- but only if you truly enjoy it. If you don’t, then don’t force yourself to do it because you’re only wasting your time and admissions officers can see through feigned passion. Look for activities/sports/anything that makes you tick and follow it with zest; that’s a strong EC.
