Low GPA, Rigorous Schedule, High SAT and AP Test Scores

I'm looking to evaluate my chances for getting into a decent state school (UT Austin) based on my current test scores, GPA, etc.

My weighted GPA is 3.05 (on a 6.0 scale), which is ridiculously low in comparison with the rest of my class. This is the GPA for my freshman and sophomore year, so there is a chance that the GPA could rise a small amount before I submit my applications.

I've taken the SAT once (excluding one taken in 7th grade) and scored a 2120. I'm planning on retaking the SAT and taking the ACT; I think I'm capable of scoring near 2300 on the SAT, as I did no preparation or studying for my first one. I'm also optimistic about a good ACT score.

I took no AP classes my freshman year, two my sophomore year, five my junior year and I plan on taking seven during my senior year. I've taken two AP tests thus far and received 4's on both of them. I think I'll be able to score 4's and 5's on my remaining AP tests. The list (including past and future AP courses) is as follows:

AP World History
AP Human Geography
AP Macroeconomics
AP European History
AP U.S. History
AP U.S. Government
AP English III
AP English IV
AP Biology
AP Physics B
AP Calculus AB
AP Statistics
AP Art History
AP Computer Science A

I'm also taking an Advanced Academic course on Anatomy and Physiology my senior year, but it doesn't have a corresponding AP test. I still have time to change my senior schedule, and I'm pondering changing it to include AP Spanish IV, but I'm not sure what significance it would have when being considered my colleges.

What would be my chances for getting into a college like the University of Texas at Austin with these kinds of stats? Thanks. :)

Why did you spread yourself so thin?

Apathy and poor foresight, I suppose. It’s kind of irrelevant now.
