I'm going into the second semester of my first year here at Michigan. I like humanities/social science courses (I'm pre-law) but despise anything related to science.

The LSA First Year Handbook says that one needs at least 7 credits in Natural Science. But in the next paragraph, it says that, in addition, students need at least 3 credits in 3 of the following areas and NS is listed again. So do I have to take a minimum of 7 credits or 10 credits in NS?

Well, since you love HU and SS I'm willing to bet you'd be happy to take 3 cr extra in each of those (bringing you up to 10), then as long as you put the final 3 cr from that section in one of the other areas (I think they include like math and a few others) then you'd be set. Since you only have to do the extra 3 credits in 3 of those categories just make sure you pick 3 categories other than NS.

You have to get at least 7 credits in Social Science, Humanities, and Natural Science, for a total of 21.

Then you need to get 9 more. There are 5 categories (Humanities, Social Science, Natural Science, Math and Symbolic Analysis, and Creative Expression). You pick 3 of those categories and take 3 credits in each of them.

So 7 is the minimum amount, and you can take 10 if you decide to have Natural Science be one of those 5 areas.
