This year I am taking the physics and spanish subject tests for sure, but I do not know whether to take the US history or math 2 subject test in addition. I either want to go into engineering or political science, so it is hard to know which text to take. Also, which is easier? By the way, I am in AP US history right now.

Most engineering programs that request/require Subject Tests require that math be one of them.
It honestly depends on how good/bad you are at math. Math II will cover all topics up to Pre-Calculus, so if you are enrolled in that or higher, you should be able to take the test by the end of the year. the Barron’s book for Math II is more than enough to prepare you, and the Math II test would be fairly easy to get an 800 if math is one of your stronger subject areas.
I have not taken the US History test, but I have heard that the subject test is must more demanding than the AP test (at least, in a different manner). You may learn all the basic knowledge in your APUSH class, but the subject test requires memorization of events, rather than being able to synthesize history/evidence you’re presented on the AP test. If you have the time to study and memorize, go for it, but this will likely be very time-intensive.
