It largely depends on your math and problem solving background already - I and a lot of math majors I know have scored 800 on math with no prep (although it took me a significant amount of prep in the other sections to only score decently).
But like anything else, an 800 is possible with enough practice and problem solving ability.

I’m not the expert on prep books, but the official CB blue book is probably the best source. There is a pinned thread here devoted to SAT books, which you might want to check out.
Obviously the Blue Book, but you will run out of hard problems quickly. I would get the red book of older real problems and there are additional tests available online.
“Pwn the Math SAT” is regarded highly here and is at a fairly high level. There are several books of hard problems. IMO “Math SAT 800 Prep: challenge yourself …” is the best: it is also the hardest and the problems are not sorted by topic. I would also work through “Math SAT 800” and “Crush the Math SAT”. Dr. Chang’s has harder than real problems but not 800 level. If you are at 650 or less, you can start with “Barrons Math SAT Workbook”, but it is too easy if you are already at 700+.
I went from a 670 to an 800 in Math just by working through the PWN the SAT math book and working through a few official Blue Book tests. Just practicing the types of problems that show up and having a strategy to solve them all really helped. Plus, a little luck to avoid any stupid mistakes that could take you to a 780 or 770.

Pretty sure IMO math is a bit too difficult.
I tutor the math SAT and consistently get 790 on it. I find “Math SAT 800 Prep” challenging, but I can do almost all the problems. I would recommend going through “PWN …” first and doing all the available hard real problems, but “Math SAT 800 Prep” might be useful if you are at like 760 trying to get to 800.

The way the SAT is scaled, you would most likely need to get every single question correct to receive 800 in Math. This probably sounds like boring, obvious advice, but please remember to double, triple check your answers. In the last five minutes of one section of my exam, I corrected four silly mistakes … and got my 800. This also means, work to increase your problem-solving speed so that you have that time to check yourself before you wreck yourself. Speed comes with practice. So sit down and practice a LOT.
