I'm really intrigued by some of the awesome dual degree programs in the US such as Oberlin, where you can earn a degree from both the conservatory and the college of arts and sciences.

Is this possible at McGill? I.e., is one capable of earning a degree from both the Schulich School of Music as well as the Faculty of Sciences simultaneously?

When my son spoke to the admissions folks at McGill, they said there was a lot of flexibility. Music students do not have specific GenEd requirements. Rather, they can use those elective credits any way they want. That in itself is not enough to make a second degree. So, I think if you want to major in music and science, you would have to assume it would take at least an additional semester and more likely two.
