In the description of the employment section, there does not appear to be a hard word limit. I would love to describe my internship in detail, but is there a certain amount that would be appropriate? The activities description is 40 words or less for example.

That doesn’t sound like an invitation to describe things in detail. I’m not seeing anything about “describe your job position,” and it tells you what to include. However, you could say, rather than just “intern, tech company…”, something more descriptive. Maybe “Lead customer acquisition intern, “ etc…
There are five supplemental essays, and this:
“There is also one final, open-ended, additional-information text box where you can tell us anything else you think we really ought to know.”
Note that is says “we REALLY ought to know.” Perhaps describe your internship there, if it had a big impact on you. But I think being concise and impactful is better than anything long-winded.
I would suggest using the provide space to include your job title, employer name, dates of employment, and approximate number of hours per week.
If you have a burning need to add details about the job, I suggest the elevator speech version - what you can say in 30 seconds or less.
An extended essay on your employment would be a bad idea, IMHO. If it’s of value to an admissions officer, put it in an essay where they will see it. I suspect the employment section is one of those areas on which they spend 10-15 seconds reviewing.
