I am going to take the new SATS soon, but I don't know what to consider a "good" score. For example, a 2100/2400 is the same as a 1400/1600 percentagewise, so will colleges consider a 2100 and a 1400 to be equivalent? Are score equivalency tables or anything like that available?

i don't think you can make direct comparisons.

For example, a 2100 could be a 700CR/700M/700W...which is about a 1400

or it could be an 800 CR/800M/500W...which is unlikely but you get the point...
it all depends on the breakdown
