I am a prospective econ major and considering going on to grad school with it (yea I know) so I definitely want to take some upper division math and statistics classes. How difficult is it for non-majors to enroll in those classes?

If you look on [Home Page - Online Schedule Of Classes](http://schedule.berkeley.edu) , it does not look like for Spring 2011 that typical courses like Math 104, 110, 113, and 185, or Statistics 134 are that full, but Math C103 / Economics C103 and Statistics 133 and 135 are full or close to full.

Math upper divs usually aren’t high priority. You have a strong chance enrolling in the course as long as you aren’t picky which section you get (which is generally true for most departments). And if you’re asking if there’s a difference between majors and non-majors in the math department, there isn’t in terms of enrolling (at least as far as I know).
