If a school says it requires 2 SAT II Subject Tests, does taking 3/4 tests give me any kind of advantage over the others ?

no, they only look at two. though it does give you the benefit of picking your best two.

^But that's the ONLY advantage right ?

And IIRC, there are a few schools that require 2 and recommend 3 ... What about them ? 3>2?

It could help you stand out a little.

Most homeschooled students have encountered colleges asking for as many as five SAT II tests, and the Common Application has space for reporting six SAT II scores, so it wouldn't be weird to submit more than the minimum number required.

If I take 3 tests, can I CHOOSE 2 to send to a college or does CollegeBoard send scores of all 3?

College Board sends out a score report for SAT tests listing all your scores from SAT I and SAT II testing from ninth grade on up. Some students (my son is one example) also have tests on that score report from earlier grades, taken for Talent Search

testing. You don't get to pick and choose subjects from your list of tests taken, but colleges themselves will actively seek out your highest scores and consider those primarily for admission decisions.

Ahh. I see. Thanks a ton !

Math 1 is a pretty low scoring test eh ? Took a practice test today without any preparation; only managed a 710.

I have 2 options -
Math 1, Math 2, Physics
Chem, Math 2, Physics

Which one should I go for ? I'm better at Math than I am at Chemistry, but it's easier to score on the Chem test AFAIK.

definitely chem, math 2, physics .. doing math 1 and 2 seems redundant

I'll be applying for Computer Science or Computer Engineering. So in that case, will the colleges consider my Chemistry test scores?

No point at all in taking Math 1 if you have taken precalc or trig. The tests cover the same subject matter except that Math 2 also covers precalc/trig.

Math 2C is the way to go, especially if you plan to major in anything that has to do with a lot of math. Most colleges even require it if you seek an engineering major! So, I suggest researching the colleges you plan to go to. And yes, Chemistry (along with any SAT2) is considered, but it may or may not be the best for your major.
