If a school only requires 2 SAT Subject Tests, is there any point in taking more than that?

I'd probably go with yes on that one. I figure you're already there for the tests anyway, an extra hour won't make that big of a difference in your life, and some colleges you might want to apply to would want three.

I see. But none of the schools I'm interested in require more than two. Would it still be worth it?

If you do well it will boost your application, if not then you can choose not to send them or just not put them on your application.

they will be visible when you send your SAT scores. All of your SAT I and SAT II scores are complied onto 1 page that is sent to colleges. If you can get 700+ on the third exam, then go for it as it can only help you.

for homeschoolers or those with weirder/rarer schooling situations, a definite yes.
