NC school: large public (2500+), not as good, people aren't as competitive, it's seen as a really good public school here, but I don't think it's that great, most go to state schools, but going to an Ivy is a big deal

I know this really sucks, but given your apparent level of success I'm sure you'll get in somewhere where you belong. UChi has a very distinct atmosphere and maybe the admin officers thought that wouldn't be best for you. I don't think it's because you're not qualified - definitely not, if what you've shared is true and representative of all your achievements.
