Is it ok to give a school, who has asked for 2 teacher rec's - one from the math/sciences, one from english/social studies - an additional TWO recommendations??

I wanted to give an additional recommendation from a teacher who knows me better than my chosen math/science teacher, and also another recommendation from the principal, who doesn't really know me well, but I hope will give a good effect??

Is this acceptable? Or will admissions officers simply just ignore it because they've got too much work to do anyway?

That depends on which school you are applying to. Some allow for additional recommendations from someone who knows you in a different way from your teachers (for example a sports coach). Others penalise you for not following the rules.

In general, it is usually wisest to go with teachers who know you well. A teacher who is only able to write "This student did well in my class" is not adding anything that isn't already in the application, and the most competitive schools may wonder about you. Given a 4 year secondary school program then there are 8 possibilities for each of those recommendations. If the most stirring recommendation you can find is "he/she did well in my class" then you may be damned with the faint praise.

Obviously this may well vary dramatically from school to school.
