I already submitted my Common App to three schools: UChicago, UMich, and TCNJ Medical Program.

Now I discovered that I had a typo in my activity short answer essay:

"...the elegance of the blossoming flowerall of these will always be a part of the beauty in my own life..."

What I had meant to say was:

"...the elegance of the blossoming flower--all of these will always be a part of the beauty in my own life..."

The dash was replaced with this bizarre character ""

What should I do? I was thinking of calling the admissions office for all three schools and sending them a letter expressing my apologies and an updated version of my common app. Is this appropriate?

This is a glitch in the software that a lot of people have run across. There are other threads explaining how to correct the problem. If you had previewed before sending you might have caught and corrected it, but I’m sure that a number of apps are submitted without catching the problem. You don’t need to worry about it. I’m sure the admissions office sees this frequently enough to understand and will overlook a one character typo that resulted from a software glitch.

Well now that you have sent it, you cannot fix the problem, i’m sure adcoms will understand. However, I suggest you make an alternate version of your common app and fix the error so that the error will not reach the rest of schools you apply to.
