You’ve already taken SAT1 twice at the beginning of junior year? Well, I’d have said resit to try to push it up to 2300 or something, but I don’t know how the schools will look at it if you take it more than twice…

Otherwise your GPA might be a little low compared to what I saw on other CC threads, but you look strong on the ECs; I don’t know what you mean when you write that you spoke in front of the UN, but you certainly have some solid material there. What I would recommend (and that’s general advice), focus around the ECs with leadership, or ones that are particularly meaningful/you are most invested into (in the best of worlds, you should have leadership in your meaningfuls ECs). Write your essays on them; but you have time. Just focus on your studies for now  And apply when time comes!

Oops - I copied the format from another poster and failed to replace ‘junior’ with ‘senior’. I’m a senior!

In terms of the U.N thing… I have worked with a sustainability-focused NGO since the spring of my sophomore year. The organization is connected with the U.N and I have been selected, multiple times, to attend climate-change/biodiversity conferences for world leaders at the U.N and around the world. At times, I have been the youngest participant.
