Brevity isn't necessarily good when in excess. Those seem like good ECs- athleticism, leadership, community service. If you can score the same on your SAT as your PSAT, you'll be above average by a decent amount at W&L. But seriously:
Race?
Gender?
State of Residence? (or country...)
Class Rank?
Course Load?
Prospective Major?

Are my Ec's numerous enough, I don't really define my life by membership but as far as colleges seem to be concerned it seems to be a requirement to be "well rounded"

Are you going to continue with football? If you are good, and plan to play, you should contact the coach. That'll also help.

I don't think I want to play at the college level but I have the ability (I've gotten letters from Vandy and some smaller schools).

As a former college football player, it's undoubtedly, a big committment, even at a small school like W&L. So I think second thoughts are certainly appropriate. W&L plays in a pretty competitive league for DIII, and it looks to me like the players have a pretty good time. What's unique about them is they play out of the country from time to time. I think they played in France earlier this year if I'm not mistaken. I think they've also played over in Italy in the past. John Grisham's book, Playing for Pizza, is fiction, but mentions W&L going to Italy to scrimmage one of the Italian league teams. I would have loved to have done something like that when I played.

My dad played at Auburn and we've discussed whether or not I should send out some recruitment film and he's told me that unless there's not a doubt in my mind that I want to play football for four more years after I graduate, I should probably not, as college is a whole different level no matter what division. Nonetheless, I'm actually a junior this year and really the success of my senior season is what is going to largely determine whether I want to continue at the college level.

Coincidentally, "Playing for Pizza" is sitting in my kitchen downstairs although I haven't really had any thoughts of reading it.

Assuming I do not play in college and do not get recruited by W&L, what are my chances based on the stats I've given.

I agree 100% with your dad.

As far as your chances, you look like a strong candidate to me at this point. Regarding ECs, it's better to have a few in which you've really been invested than a long list with only modest participation. I think you are fine with what you've been doing. My advice would be to just keep your grades and scores up, and make good use of your time over the summer.
