plz help with my froshie angst (engineers, liberal arts experts welcome)

Hi everyone I'm a physics student in A&S who wants to transfer into and hopefully double major in the college of engineering (engineering physics and EE or ME).

I've estimated the credits and it appears it will be an extremely tight schedule - with conservative AP estimates I need around 160 credits which is just barely doable if i take 20 credits for 8 semesters...

My current schedule is
Intro to CS using Java
Physics 1116 (Honors) - I almost certainly placed out of Phys I but I really want to take this course
MV Calculus for Engrs
ENGRI
FWS
Phys Ed

but this is 18 credits, and I want to stay on track for my program so I may need another course. Since I don't have the prereqs to go further down the Eng. courses I figure I can squeeze in a liberal arts distribution course. However because of my AP credits I probably need to look at the 2000 level courses. HOWEVER I don't want to pick a course that is too hard/too consuming that will tank my GPA because then my transfer to the College of Engineering will be in danger...

Can anyone recommend some easier 2000 Liberal Studies courses or a website/resource that ranks them?
(i have already French, Euro Hist, US Hist, Macroecon: FL, HA, HA, SBA and am most interested in KCM or SBA) Unfortunately I would be willing to tank my GPA for mandarin (since i know a fair amount already) but I cant start in a 2000 lvl course
