so my global health major is about researching how society and our communities contribute to the people's health issues and I for sure want to study this but idk what kind of job right out of undergrad it would get me so I'm deciding on a second major...and I thought poli sci would be good for various reasons...

I have two opposite career goals:
1)be on a campaign team like a right hand man for the person running for office
2)help communities improve their living situations by trying to implement new laws or ways of living....
I dont know, any advice?

Either major could lead to either “end result.” Neither of those career paths (political campaigning and community organizing) gives an advantage to either major. Pick the major you like better and do better in.

What’s more important is getting internships. There are many political internships available - volunteer during this campaign cycle. There are many established summer internships in Washington DC, for example (do your research). Most state and federal politicians will have application processes for internships.

You should also look into Americorps, Peace Corps, or Teach for America programs after college (typically for 1-2 year terms).
