My Dad was on the board of trustees at Stanford, and also has a scholarship named after him at the school. How much weight do you think admissions officers would put on these details and could this potentially get me accepted?(I already have stellar grades and near perfect test grades)

I talked to them at our admit weekend this year, and they all emphasized that legacy, while a factor, matters less than who you are.

But it still helps. ;)

I assume you have something you’re passionate about and that you’ve done some fun and interesting things in high school. I would work really hard on your essays, to show you really want to go to Stanford and that you aren’t treating it as a safety, but I would bet you’ll get in.

Kzsummers is completely right about legacy, but you’re not just legacy. Since your academics are on par with the rest of their applicant pool, yeah, you’ll probably get in with your dad’s history. However, don’t take any risks! Make yourself stand out regardless of your last name. Especially in that essay.
