Is it good to focus on only like the math/sci portion of “you” when writing the college essays, or should you have essays that show how you like debate, athletics, etc. even when your true strength (by far) is math/sci? (i.e. My essays will probably individually be better if I focus on math/science only, but overall, is it better for the application if I write about different things?)

Write about the stuff that defines you the most. If you focus on too much stuff they might not know what you really like. On the other hand, if you all these stuff define you by all means do it. Otherwise only focus on the significant stuff and cut the cr*p out

This brings up something interesting though: does doing math and science extracurricularly (i.e. research) count as an EC? My dad for some reason doesn't think that an Academic EC is a real EC. He says I should focus on more club/sport/etc related ones, but as far as what I like the most goes, science is wayyyy above the rest, so I'm confused.

Of course it counts as an EC. Science Olympiad, Westinghouse, Intel, all those are excellent EC's and should be front and center on your app if you are interested in a science degree.

sounds like my dad ragging about how Knowledge Bowl isn't a real team with competitions (he was the basketball jock in high school), but he's just facetious about it. Does your dad know how much effort really goes into academic ECs?

He knows about how much effort goes into them, and respects them. He just doesn't know if colleges will consider and respect them as "real" ECs (like clubs) also.
