I have only taken Bio, Math 2c, Physics, and Chem, but I can say this:

Bio- if u read princeton review, you should do well 4
Chem- make sure you know the concepts well 8
Math 2c- fairly easy for people with good math background 3
Physics- a real doozie (tough as heck) 10

Math 2C - 3; nice curve for 800, topics covered are pretty easy
US History - 4; if you've taken AP exam, you're prepared
Chemistry - 8; i find that the curve is hard for an 800. too many opportunities for stupid mistakes. but overall it's alright.
Physics - 10; it has a really nice curve (for 800) but i just wasn't prepared for it as a frosh.

USH - 1-3 b/c just facts (memorization required)
Bio - 1-3 b/c just facts (memorization required)
Literature - 10 b/c waaaaaay too subjective. Why is the curve for this worse than many of the other SAT IIs? =[

Physics is the hardest AP, hardest SAT II ever
Haven't even taken it yet and from what I read on here, and what people have told me (intelligent people) . . . well I'll probably tell you the same thing in October =

MAth II- 3, Easy enough, if your good at math and studied some
USH- 5, Depends on how well you can memorize
Physics- 9 Man, I was NOT ready for that after only a single non-AP course. Retake in October!

USH - 3, I have really good memory/absorb info quickly
Physics - 6, I have taken AP Physics B though so maybe that's why
World - 2, like USH though for some reason easier

Math IIC 3- Not too difficult
Chem- 6-7.... It is pretty hard for an 800. The curve isnt that lenient and 85 questions in 60 min. is tough....really have to pace!!!

1 being the easiest and 10 being hardest
Non-language subjects

Literature = 8 (hard, need quite a bit of analysis)
World History = 3 (not much memorization)
US History = 4 (same as world history)
Math IIC = 1 (just math)
Bio E = 6 (less memorization and a little less thinking needed)
Bio M = 7 (the topic that has people with the highest sat i average, a lot of
memorization and some critical thinking needed)
Chem = 5 (easy. The level of thinking is low and not much memorization)
Physics = 2 (the topic is difficult, but cb tests you on the most basic stuff
and generous curve)

Rank languages (w/ listening)

Chinese = 5 (I took this. It would be extremely hard for a non native speaker)
Japanese = 3 (I took the sample questions on collegeboard. Too easy. Didn't get any wrong on that or the sample in teh real sat subject tests)
Korean = 1 (A joke according to my friend who is korean to both nonnative and native)

i hate it when people say chem and physics are the "hardest" just because they take them. percentiles tell otherwise. Most people who take chem or physics score lower than people do on bio on the sat i. I think that is a strong indicator of the difficulty. Plus chem and physics have a higher percentage of people scoring 800.

us history: 5ish or so. relatively easy but still, lots of memorization.
math ic: 3-5ish. easy easy easy except for maybe one or two questions
lit: SO SUBJECTIVE. 9-10 and lit is my definite strong point. some of the passages were a little odd and IMO some of the questions were worded badly/weirdly.
