I got a 2310 on the new SAT (750 verbal, 760 math, 800 writing). The problem is, the section I got the highest score on seems to be the one that people are paying least attention to. Would you recommend that I retake the test and try to up my scores (I will be applying to colleges with SAT 25-75% ranges of about 1360/1560), or should I stick with what I have? Thanks!

Statistically, there is very, very little difference between a 750 and a 800. The (speculative) consensus has always been that schools uses bands or ranges. In this regard, a 750 and a 800 are viewed in the same way.

The answer may depend from your SAT Subject Tests' scores. The higher the SAT ST are, the lesser the incentive to retake the SAT.

My first inclination would be to stick with your current scores. However, if you feel that you could do better on the SAT and that you lost a few points on a fluke, I'd say go ahead. Otherwise, you'll spend the admission period questioning your decision to death. Your peace of mind may be worth spending a few hours on a Saturday and some forty bucks.
