It appears that only four colleges (Georgetown, Cornell, Harvey Mudd and Ressenaler) actually require you to send all SAT II Subject Test scores for tests that you actually take. Suppose - for the other schools that only require 2 tests and let you pick - you’re scoring 700-720 in practice tests for 5 subjects - should you take all 5 tests and then just submit the two best to those schools? Or should you focus just on 2 of the subjects and try to do as well in those?
Your question doesn’t mke sense. If you study hard for two tests, you might do well on two tests. If you don’t study hard for five tests and hope that somehow you will get over 700, then prepare to be disappointed.

I would focus on two-three subjects that you feel incredibly confident about. From my experience (I’m a senior who has finished testing), it is best to take SAT IIs AFTER you finish the AP Level. I took APUSH and then the US History subject test, and scored a 780. The other four tests I took (Math I, Math II, Spanish twice and Lit) I didn’t get above a 690, and I didn’t take the AP level before those exams.
Honing in on two-three subjects that you do well with in school and have time to prepare for is your best strategy.
