Which ivy leagues take 3 SAT subject tests? I thought it was 2 because they added the writing portion to the SAT. Also..do ivys except both math level 1 and 2 as two different scores/options?

I know Harvard, Princeton, Yale, and MIT accept 3 SAT Subject tests. But I think most of them have a policy that lets you choose which SAT IIs you want to take. Unless of course if you're going into a specific field -- ex. engineering (you'll have to take Math). Actually, I think MIT requires a Science and/or Math but I could be wrong. Most colleges will accept both IC and IIC results (but maybe you would like to show diversity), to know for sure about YOUR colleges, research admission policies on their individual websites.

For MIT, it's one humanities SAT II, one sci/math, and one in a field of your choice.

hayhay, you need to look closely at each college's stated policy and then call them if it is not crystal clear. start here:
